Whether you mostly work from a sitting or standing position, how high above/below elbows are your hands? How far are your eyes?

Sitting in a chair.
Hands level with elbows.
Elbows a few inches forward of normal position with arms at sides.

Same as Vince, normally a stool with hands level with Elbows. I also support my arms on the edge of my Titan pans and have pipe insulation over the pan edges to have a soft support for my forearms. Occasionally I will stand but I find that when I designed my bench for grinding if I stand I am putting a lot of pressure on my neck trying to look down at my work. I did include in my bench design the ability to move the entire bench surface up 6 inches which would work for standing I just have no desire to make that the norm.
The image you included of the old German Lapidaries always makes me think how much my ribs would hurt at the end of the day.
