My mom made Hobo Bread during the holidays every year. She told me that the recipe had been our family since the depression, and it's really fun to give as a gift.
You need 3 medium coffee cans, and I've found that some brands of espresso grind are just fine. You could also use large tomato cans, but I like the taller coffee cans. For reference, they measure about 3" across and 6-7" high.
You need:
About 1lb of Raisins
4tsp Baking soda
1/2 tsp salt
4 cup Flour
1 cup Sugar
1 cup dried cranberries
1 cup of chopped walnuts
To start, mix the Baking soda with the raisins, and add 3 cups of boiling water. You may need to adjust the water, but make sure it covers the raisins and leave extra to be absorbed.
Let raisins rest, covered overnight.
Grease and flour coffee cans and heat oven to 350
Mix salt, flour and sugar in large bowl. Add raisins and water. Add cranberries and walnuts and stir till combined.
Put approx 2 cups of mix into each can, and bake for 55-60 minutes until toothpick comes out clean. Cool on rack, and shake cans till bread pops out.
Perfect breakfast served toasted and spread with creme cheese.
For years now, I've kept my family recipes secret, following in the foot steps of my mother and grandmother. This holiday season, I realized that with both of them passed away, and me not reproducing, unless I share, they will die with me! So, from now on, I'm broadcasting my family secrets far and wide, hoping that they join a new family and create new traditions. Please enjoy, and I'll post pics in a couple of days when I make my batch.
Joshua!
