Apple Curry

I was thinking to myself today - "Self? You know what sounds really delicious? Apple Curry! It's like we took two of my favorite foods and just smashed the words together!"

That slightly insane conversation led me to wonder if such a thing exists. And if it does indeed exist, how would I go about preparing it?

For some very odd reason, this naval gazing achieved nothing. When I think of Apple Curry, nary a recipe does appear, but rather a giant sized Lithic head doth float in front of my eyes.

Please help?

This is my preferred apple, Thompkins King, an heirloom and a very nice size apple.  This particular apple from our orchard is a Thompkins King and weights 1 lb 3.7 ounces. Recipe below:

Red and Sweet Curry

¼ cup olive oil
2 large onions, chopped
1 large can pureed tomatoes (28 oz can)
2 Tbsp brown sugar
2 tsp curry powder dissolved in 2 Tbsp water
3 tart apples, diced (do not peel– dice like for pie – small wedges)
½ lb peas, cooked
½ tsp ground ginger
½ cup shredded unsweetened coconut
1-2 cups diced cooked chicken or turkey (optional)

Heat oil in a large pot.  Sauté onions until tender.  Add tomato puree and sugar.  Bring to a boil.
Add curry.  If using chicken, add it now.  Cook 2 minutes.
Add apples, peas and coconut.  Stir and heat through.  Don’t cook too long – the apples should stay firm.

Serve over rice.

The instructions omitted when to add the ginger (which was an addition to the original recipe). Just add it with the curry powder, so you can mix it in well.
Use whatever type curry powder you want, mild or hot - add as much as you like.

I find that when making curries or other Asian foods if you can get fresh ginger at the store and mince it yourself, it's better than the powdered dried stuff.  However I also know that not everyone has good fresh ginger available.  Just be ready for the punch as fresh ginger is pungent and strong, so a little goes a long way - unless you like some punch to your food, then of course add more.
